About Fiona: Fiona Aitali grew up in the postcard-perfect, colourful town of Tobermory on the Scottish Isle of Mull, where rolling hills meet the sea and her baking talent quickly turned into local legend. Neighbours would line up for her buttery shortbread and jam-filled scones, and word of her magical treats spread far beyond the island’s shores. What began as a beloved weekend hobby soon blossomed into her lifelong profession: today, she holds the whimsical yet well-earned title of Chief Biscuit Engineer at Tobermory’s iconic Island Bakery, a cherished institution renowned for its handcrafted organic biscuits made with the finest local ingredients.

When Fiona received her Coeliac diagnosis, she refused to let gluten restrictions steal her joy—or the joy of sharing her bakes with others. Determined that everyone, regardless of dietary needs, deserved to savour a delicious, freshly baked cookie, she teamed up with the Island Bakery team to reinvent classic recipes from scratch. After months of testing and tweaking, she launched a groundbreaking range of organic, gluten-free cookies that stay true to her signature flavour and texture. Created by Fiona Aitali and baked fresh daily at Island Bakery, these treats bear her initials “F.A” as a proud mark of quality. Just like Fiona herself—warm, welcoming, and full of heart—they’re sweet, satisfying, and completely gluten-free, proving that great baking is always inclusive.
