Reviews
In pursuit of health, I specifically tried this cooking method that uses only flour and water to form the dumpling. When it came out of the steamer, the thin, golden-brown, translucent crispy crust was like a work of art. Biting into it produced an incredibly light crunch, completely devoid of any greasy feeling. The chive filling, steamed to retain its original spiciness and sweetness, was tender and juicy; the dumpling skin was soft and moist on top, and crispy and fragrant on the bottom. This exquisite soft on top, crisp on the bottom texture collided on my tongue, satisfying my craving for a crispy texture while preserving the freshest essence of the ingredients.
The chive filling is the soul of this dish. Because there's no extra oil covering it, the original spiciness and sweetness of the chives are fully released. Paired with tender scrambled eggs or shrimp, every bite is like a burst of spring on your tongue. The upper part of the dumpling wrapper remains moist and soft, like it's been steamed, while the bottom is incredibly crispy—this contrast of **soft on top, crisp on the bottom** is irresistible. No oil is needed; it's made in a non-stick pan, relying solely on the crystallization of flour/starch water to form the dumplings. The dumplings are cooked without water, using the steam generated by the starch water, and finally, the moisture evaporates to create a crispy, icy effect.
